coconut pie, mayonaise biscuits, and chicken casserole...

November 22nd, 2010 at 08:07 pm

I found my Granny's church cookbook from the early 70's and am cooking 3 recipes from there to see if my dear Asher will enjoy any of them. We grew up in south Georgia and my precious Granny was an amazing cook. Today I think of her and will attempt my first coconut pie. Any suggestions welcome... Do you leave eggs out for a while or butter?

Saved $2.00 NS days and $9.00 at Kroger (used free Cheerios coupon). Will add $11.00

Previous total: $163.00
Today total: $11.00
Overall Total: $174.00

I leave eggs and butter used for baking out for a few hours until they are at room temperature. Good luck with your coconut pie. I like everything that's made out of coconut (I grew up in an island in the Caribbean).

I always leave the butter out so it gets nice and soft. Smile

We leave the butter out long enough to soften, but not the eggs... not sure what benefit warmer eggs would lead to. There is nothing like holiday food with family recipes, is there? It's the one form of insurance that the feelings of the holidays will return time and time again.
