What to do with all these pecans??

Went to visit my nurse friend Eleanor who lives on a farm in Edgefield,and we met a kind lady selling wood furniture off the road and she let us pick all of the pecans that fell off the trees. My son was excited and kept calling them rocks! It was too fun! Exercise and entertainment all in one! Down here there's a pecan house they will crack your pecans for you. It was wonderful now what do I do with all of these pecans?

    You might make pecan brittle instead of peanut brittle.

    Toast the pecans in a dry skillet or oven. Throw a bit of maple syrup on at the end if you want. Serve in a mixed-greens salad with some kind of fruit (diced pears or apples, either raw or sliced & oven-roasted). Smile

    Each fall, I purchase 500-1200 pounds of fresh Texas pecans. I pay to have them cracked. I shell and sell enough pounds to recoup my original investment, then give the rest as Christmas gifts to family/friends. Each of my kids (I have seven) get 20-25 pounds of shelled pecans; they store in the freezer to be used in their baking throughout the year. EVERYTHING tastes better with Texas pecans added! HA!

    They freeze fine for recipes throughout the year.

    Let's see chopped in leftover turkey for turkey salad sandwiches with celery and apple.

    Pecan pie of course. Chopped on ice cream. Chopped up in cookies with choco chips instead of walnuts. In brownies. Mmmm.... just about everywhere you use walnuts or almonds!
